Too Cool Macaroni Salad

This simple, savory macaroni salad is my very favorite. Cucumber gives it a bright, fresh taste that is completely refreshing and satisfying. 

  • One 16 oz. box elbow macaroni
  • 1 medium cucumber, peeled, seeded and diced
  • 2-3 spring onions (scallions) sliced
  • ½ - ¾  cup mayonnaise (this is to taste. Everyone has a preference for how dry they like their salad)
  • 1 – 2 teaspoons milk (optional)
  • ¼ teaspoon celery seed
  • Salt and pepper to taste 
  1. Cook elbow macaroni according to package directions.
  2. Drain and rinse with cold water to stop cooking.  Allow to cool 5-10 minutes.
  3. Add cucumber, scallions and mayonnaise to macaroni.
  4. Toss to coat and combine. Add more mayonnaise or milk if too thick.
  5. Add celery seed.
  6. Season with salt, pepper to taste.
  7. Serve immediately or refrigerate for later.
