Too Cool Macaroni Salad
This simple, savory macaroni salad is my very favorite. Cucumber gives it a bright, fresh taste that is completely refreshing and satisfying.
- One 16 oz. box elbow macaroni
- 1 medium cucumber, peeled, seeded and diced
- 2-3 spring onions (scallions) sliced
- ½ - ¾ cup mayonnaise (this is to taste. Everyone has a preference for how dry they like their salad)
- 1 – 2 teaspoons milk (optional)
- ¼ teaspoon celery seed
- Salt and pepper to taste
- Cook elbow macaroni according to package directions.
- Drain and rinse with cold water to stop cooking. Allow to cool 5-10 minutes.
- Add cucumber, scallions and mayonnaise to macaroni.
- Toss to coat and combine. Add more mayonnaise or milk if too thick.
- Add celery seed.
- Season with salt, pepper to taste.
- Serve immediately or refrigerate for later.
