Mediterranean Bread Dip and Marinade
This little slurry is the perfect dip for chunks of French or Italian bread. It is also a fabulous marinade for shrimp or chicken before grilling or roasting.
- ½ teaspoon minced rosemary
- ½ tsp chopped thyme leaves
- ½ tsp chopped oregano leaves
- 1 garlic clove, minced
- ¼ teaspoon coarse or Kosher salt
- 1pinch of crushed red pepper flakes
- 2 ½ Tablespoons extra virgin olive oil
- black pepper to taste
- Add rosemary, thyme and oregano to a small dish.
- Add salt to minced garlic and smash it a few times over the cutting board to create a rough paste.
- Add the garlic/salt paste to the herbs.
- Stir in pepper flakes and olive oil to the mixture.
- Mix well and season with a few grinds of black pepper.
